Chickpea, Avocado & Turkey Grain Bowl

Ingredients (approximate):

  • 4 oz cooked lean ground turkey or turkey breast strips

  • ½ cup cooked chickpeas (drained if canned)

  • ½ cup cooked brown rice or farro (or quinoa if you prefer)

  • ¼ avocado, sliced

  • 1 cup chopped mixed veggies (e.g., cherry tomatoes, cucumber, bell pepper)

  • 1 Tbsp olive oil + 1 Tbsp lemon juice (or vinaigrette)

  • Salt & pepper to taste

  • Optional: chopped parsley or cilantro

Instructions:

  1. In a skillet (or using pre-cooked turkey), warm the cooked turkey until heated through. Season with salt & pepper.

  2. Warm the cooked grain (rice/farro) and chickpeas slightly (if desired).

  3. In a bowl, add the grain base, then top with turkey, chickpeas, chopped veggies, and avocado slices.

  4. Drizzle olive oil + lemon juice (or vinaigrette) over the bowl. Gently toss or leave layered.

  5. Garnish with parsley/cilantro. Serve immediately or pack for lunch.
