Chicken, Sweet Potato & Veggie Hash Bowl
Ingredients (approximate):
1 chicken breast (≈6 oz / 170 g), diced
1 medium sweet potato, peeled & diced (~½-inch cubes)
1 small red bell pepper, chopped
½ small red onion, chopped
1 Tbsp olive oil
1 tsp smoked paprika
½ tsp ground cumin
Salt & pepper to taste
1 handful baby spinach or kale (optional)
Optional: chopped cilantro or green onion for garnish
Instructions:
Heat olive oil in a skillet over medium heat. Add diced chicken, season with salt & pepper. Cook ~4-5 min until lightly browned.
Add sweet potato cubes, chopped red pepper & onion. Season with smoked paprika, cumin, salt, pepper. Stir to combine.
Cover skillet, reduce heat to medium-low, cook ~10-12 minutes, stirring occasionally, until sweet potato is tender and chicken cooked through.
If using, add baby spinach/kale in last minute and let wilt.
Plate the hash in a bowl. Garnish with cilantro/green onion if desired.
Serve immediately or portion into lunch containers for the week.
