Chicken, Sweet Potato & Veggie Hash Bowl

Ingredients (approximate):

  • 1 chicken breast (≈6 oz / 170 g), diced

  • 1 medium sweet potato, peeled & diced (~½-inch cubes)

  • 1 small red bell pepper, chopped

  • ½ small red onion, chopped

  • 1 Tbsp olive oil

  • 1 tsp smoked paprika

  • ½ tsp ground cumin

  • Salt & pepper to taste

  • 1 handful baby spinach or kale (optional)

  • Optional: chopped cilantro or green onion for garnish

Instructions:

  1. Heat olive oil in a skillet over medium heat. Add diced chicken, season with salt & pepper. Cook ~4-5 min until lightly browned.

  2. Add sweet potato cubes, chopped red pepper & onion. Season with smoked paprika, cumin, salt, pepper. Stir to combine.

  3. Cover skillet, reduce heat to medium-low, cook ~10-12 minutes, stirring occasionally, until sweet potato is tender and chicken cooked through.

  4. If using, add baby spinach/kale in last minute and let wilt.

  5. Plate the hash in a bowl. Garnish with cilantro/green onion if desired.

  6. Serve immediately or portion into lunch containers for the week.
