Anti-Inflammatory Strawberry Chia Pudding

A healthy, vibrant breakfast trending because of its “make ahead + health boost” appeal. It targets the “healthy breakfast” trend — chia seeds for fiber/omega-3, fruit for antioxidants — and part of the “make ahead, grab-and-go” movement.

Ingredients (approx):

  • 3 Tbsp chia seeds

  • 1 cup almond milk (or milk of choice)

  • ½ cup diced fresh strawberries (+ extra for topping) You can also opt for different berries, or add banana.

  • 1 Tbsp maple syrup or honey

  • ½ tsp vanilla extract

  • A pinch of sea salt

  • Optional: sliced almonds or shredded coconut for topping

Instructions:

  1. In a jar or bowl, mix together chia seeds + almond milk + vanilla + maple/honey + salt.

  2. Stir in ~½ cup diced strawberries.

  3. Cover and refrigerate at least 4 hours (ideally overnight) so the chia seeds gel.

  4. In the morning, give it a good stir (if too thick, add a splash of milk).

  5. Top with extra strawberry slices, almonds or shredded coconut.

  6. Serve chilled.
