High-Protein Breakfast Quesadilla

A savory, satisfying breakfast that delivers ~30 g+ of protein and tastes delicious!

Instructions:

  1. Heat a non‐stick skillet over medium heat. Brown lean breakfast sausage (or turkey sausage) until cooked through; set aside.

  2. In the same skillet (or a clean one), scramble 2 whole eggs + 2 egg-whites until just set. Season with salt/pepper.

  3. Warm one tortilla (whole‐wheat or choice) in the skillet for ~30 seconds each side.

  4. On half the tortilla, layer: scrambled eggs, cooked sausage pieces, shredded cheese (e.g., cheddar or mozzarella), optionally some sautéed veggies (bell pepper/ onion/mushrooms - your choice).

  5. Fold the tortilla over to make a quesadilla, press gently. Cook ~1–2 minutes each side until golden and cheese melted.

  6. Remove, let rest 30 seconds, then cut into wedges. Serve with salsa, guacamole or Greek yogurt on the side.

  7. Optional: Make multiple and store in fridge; reheat in skillet/air fryer for meal prep.
